Said file is \Documents\Euro Truck Simulator 2\config.cfg. If it's not, you could just try setting the resolution in that file manually and saving it, see if that helps. Setting it full screen probably won't hurt either. Other games' resolutions shouldn't affect your res in ETS2, or other games for that matter.
I cant see that configuration control panel anywhere. Not in the game or any of the Logitech software. I have tried G Hub and Logitech gaming software. I have an issue that my G920 wont do 900 degrees. The game settings are at 900 degrees. I have loaded the Logitech G-Hub software, but cant find anywhere to configure it to 900 degrees by default.
The steering ratio is the amount of degrees you have to turn your steering wheel to turn the wheels on the truck one degree. This ratio with standard settings is 12.86. That's because you can turn the steering wheel 900 degrees and the wheels on the truck can turn 70 degrees. 900/70 = 12.86. If you google the specs for some trucks you'll find

Hi, after the new update there are some settings that we can change to get different physics behaviour. I'm not a RL Trucker, so, I don't know what is the best settings for a realistic experience. I'm talking about Truck and Trailer Stability + Suspension and cabin suspension stiffness

I currently run @ all high settings, 4k resolution, 150% scaling, with some graphics related mods, tweaked gamma, colour and other settings on my screen, etc. P.S Thanks for mentioning
